Build Your Own Salad Recipe

For the first 15 years of my life, I hated salad. I never ever ate it! But only because I thought salad meant iceberg and tomatoes. And I did not like tomatoes... so really, I thought salad was just iceberg lettuce.

But salad is so much more than that!

You can get so creative with salads. Here's how:

1. Choose a base:
Spinach
Kale
Collards
Swiss chard
Romaine
Mixed greens
Butter lettuce
Red or green leaf lettuce

2. Add a grain &/or bean:
Quinoa
Millet
Buckwheat
Amaranth
Lentils
Black beans
Kidney beans
Mung beans
Chickpeas

3. Add as many veggies as you’d like:
Beets
Carrots
Cucumbers
Celery
Bell peppers
Tomatoes
Broccoli
Cauliflower
Sweet potatoes
Radishes
Zucchini

4. If you’re going for a sweet salad, add some fruit:
Apples
Berries
Mangoes
Oranges
Pomegranate
Pear
Figs

5. Chose 1-2 health fats:
Avocado
Coconut chips
Hemp seeds
Chia seeds
Pumpkin seeds
Sunflower seeds
Walnuts
Almonds
Pecans
Pine nuts
Flax

6. Choose 1-2 extra superfood salad toppers:
Seaweed
Nutritional yeast
Fresh herbs
Ginger
Kimchi
Sauerkraut
Edible flowers
Micro greens

7. Dress it with a nut/seed butter & citrus or vinegar:
Almond butter
Peanut butter
Pecan butter
Cashew butter
Hazelnut butter
Hemp seed butter
Sunflower seed butter
Tahini
Coconut aminos
Lemon juice
Lime juice
Orange juice
Apple cider vinegar
Coconuts vinegar
